Selecting only the finest local suppliers, Head Chef David Haetzman creates the menu at the award-winning Restaurant at the Rutland using the best seasonal Scottish produce. David draws inspiration from the actual ingredients: discovering unusual and exciting items that are available and creating flavour combinations that work to produce the best possible results. David changes the menu every 6 – 8 weeks.
